About the Recipe
We love making this simple sungold salsa thoughout the summer. It’s great served with beans and rice or spooned over summer tacos.

Ingredients
one small onion
one manzano chile(can add more or use less based on your prefered spice tolerance)
one lemon
salt
one basket of sungold tomatoes
one or more calendula flowers(optional)
one finger lime (optional)
Preparation
Thinly slice the onion and chile
Add to a bowl with a big pinch of salt and the juice of the lemon
Let sit for an hour (or longer, can prep this the day before)
Remove the stems from the tomatoes and cut them in half
Mix the halved tomatoes in with the onions and chile
Taste for salt and add more if needed
Remove the petals from the calendula flowers, mix most of them in and set some aside
Top with finger lime and rest of calendula petals
Enjoy!
